Keep in mind that these are the DRY PEPPER SHU (Scoville Heat Unit) numbers, which can change randomly per pepper.  The SHU of the pepper does NOT directly reflect how hot your sauce will be. Other ingredients such as water, vinegar, fruits and anything else added in the ingredients will affect the heat of peppers.  So while you see how hot the DRY PEPPER itself can be, this does not mean your hot sauce will have the same heat.
