This sauce leads with a lush, velvety sweetness from Mango and Sugar. Tamarind Concentrate introduces a deeply tart, prune-like acidity, while Star Anise and Black Pepper provide a warm, licorice-like aroma and dry spice. Apple Cider Vinegar adds a mellow acidity that balances the heavy fruit. The experience transitions quickly from a complex, spiced entrance to a sustained, glowing Habanero fire.
This sauce is an ideal match for fusion chicken wings, roasted duck breast, and grilled lamb chops. It also works well as a vibrant addition to aged gouda, sharp cheddar, and pork ribs. Additionally, it excels as a gourmet finisher for shrimp or pork stir-fry, grilled mahi-mahi, and glazed carrots, or as a bold flavor booster for charcuterie boards and BBQ sauces.

Very interesting flavor combo, sweet, and what I'd call "grocery store hot". The prominent anise flavor needs to be considered in use. Like the other Tannenbaum sauces, it works very well as wing sauce (1/2 cup sauce to 1/3 cup butter). We did that with popcorn chicken and based on a recommendation from Tannenbaum, we tossed some of them into a basic leaf and cheese salad that already had my wife's simple vinaigrette (olive oil, balsamic, sugar, salt, mustard). That was truly wonderful!
