Ancho Pepper

The Ancho chili is essentially the MVP of the Mexican pantry. If the jalapeño is the "famous one," the Ancho is the "respected one." It is deep, dark, and dependable, providing the foundational flavor for some of the most iconic dishes in Mexican cuisine.  Ancho chilis are very mild (1,000–1,500 Scoville units). Their natural sugars and earthy oils act as a "buffer," rounding out the sharp, stinging edge of super-hot peppers.
