Pineapple isn't just for pizza or poolside cocktails. In the world of hot sauce, it is one of the most versatile "bridge" ingredients available. Whether you’re a fan of a slow-burning habanero blend or a face-melting Carolina Reaper concoction, pineapple plays a crucial role in balancing the heat.  Pineapple contains citric and malic acids, which provide a bright tang. More importantly, it contains bromelain, an enzyme that breaks down proteins. While this is mostly neutralized during the cooking/bottling process, it helps create a smoother texture in the mash.
